  • Preparation of Sardinian Ladyfingers

    INGREDIENTS

    • 10 WHOLE EGGS + 2 YOLKS
    • 350 GR SUGAR
    • 350 GR FLOUR
    • SALT TO TASTE
    • Icing sugar to taste

     

     

    PREPARATION

    The biscuits must remain white, because if they become too golden they will be dry.

    Separate the egg whites from the yolks, which you will set aside together with the other two yolks foreseen in the recipe.

    Beat the egg whites until stiff together with 300 g of sugar and a pinch of salt with the help of an electric whisk.

    Gently add the cream of egg yolks and sugar to the egg whites, mixing with a movement from the bottom up, being careful not to disassemble the egg whites.

    Gently add the flour.

    With the help of a pastry bag, form i savoiardi biscuits directly from a sheet of baking paper placed on a tray.

    Space them well apart and form them about 10 cm by 3 cm in size.

    Sprinkle with the remaining sugar and icing sugar.

    Bake them in a preheated oven at 180°C for 30 minutes.

    Let cool i Sardinian ladyfingers and serve.
