  • INGREDIENTS FOR MAKING Sardinian LIMONCINO
    1) Sardinian lemon peel  (possibly fresh lemon peel cut during the day)
    2) Pure alcohol at 90°
    3) Sugar… 600 g per liter of water
    4) Water… 1 liter per liter of essence



    Ratio: 600 grams of sugar X 1 liter of water X 1 liter of essence

     

     

    PREPARATION:

    •  First, get yourself a large glass container with an airtight seal.

       If possible, clean the lemon peel from the white parts.

       Fill the container with lemon peel, almost to the brim (- 2 cm.) but without pressing.

       Pour the alcohol into the container up to the brim, to submerge all the lemon peels.

       Periodically check the alcohol level and add more if missing.

       Dividing the peels from the essence: drain the peels in a container – put a sieve and spill all the contents… The essence is
      placed in a glass bottle and set aside –

      Press the peels but without grinding them (as for making wine) in order to extract the essence contained… add the essence obtained from the peels
      to the other already set aside…

      Strain all the essence with a cotton cloth… Check the overall quantity of essence obtained, because how much water with sugar you need to prepare will depend on this. Now not knowing the quantity of lemon peel you have available and consequently not even the quantity
      of essence obtained…

    Let's assume that you have obtained a liter of essence:

    • Put a saucepan on the fire with a liter of water Add (to cold water) 600 grams of sugar taking care of
      mix well even during the boiling phase.
    • Bring and leave to boil (taking care to stir) about 10/12 minutes – Turn off the heat and leave to cool in the same container.
    • Take a two-litre bottle that is well washed and dry… Pour the essence and the syrup of water and sugar until full… Mix everything well and keep it in a dry and dark place for about fifteen days, taking care to turn it upside down every two or three days to favor the amalgamation of the various components.
