160g Red Tuna Tarantello from Carloforte

BLUEFIN TUNA: In the first ten days of February, the school leaves the northern seas and enters the Mediterranean waters through the Strait of Gibraltar in early spring. Reproduction occurs here, aided by water temperatures ranging between 16 and 19°C. Fishing takes place in late spring, around May, a time when the tuna have not yet begun their reproduction phase and their flesh is rich in fat and highly nutritional. For our canned food lines, we purchase and process only tuna caught in May using sustainable methods (hook and line).

TUNA PROCESSING AND CUTTING

Tarantello

It is obtained from a portion of the white tail (the lower part of the tuna), which is slightly fattier than the dorsal because it absorbs some of the fat from the belly. It makes up 8% of the tuna and contains 11.2 g of fat per 100 g of product.
