In the northern part of Sardinia, pabassinas are biscuits whose dough is enriched with raisins and walnuts and decorated with a white icing.
In the more southern areas, however, pabassinas are made with sapa. The saba is thickened and cooked with fine durum wheat semolina, creating the Sardinian sweets typical of some inland areas.
This mixture is further flavored with generous additions of raisins, almonds, orange zest, and other flavorings that vary depending on the production area.
The final result is a compact mixture that can be easily shaped by hand.
INGREDIENTS: Sultanas, sapa (concentrated red grape must), type "00" soft WHEAT flour, sugar, WALNUTS, HAZELNUTS , orange peel, lemon flavoring, cinnamon. May contain traces of: Crustaceans, Fish, Peanuts, Soy, Milk, Sesame seeds, Celery, Sulfur dioxide and sulphites, Mustard.

- Ingredients for about 20 Sapa Papassini
- 200 grams of grape sapa;
- 40/50 grams of fine durum wheat semolina;
- 200 grams of raisins;
- 100 grams of dried figs (*) ;
- 20 grams of orange peel (*) ;
- 200 grams of peeled almonds;
- a pinch of cinnamon.
