In northern Sardinia, pabassinas are biscuits whose dough is enriched with raisins and walnuts and decorated with a white icing, typical Sardinian sweets.

In the more southern areas, however, pabassinas are made with sapa. The sapa is thickened and cooked with fine durum wheat semolina.

This mixture is further flavored with generous additions of raisins, almonds, orange zest, and other flavorings that vary depending on the production area. The end result is a compact mixture that can be easily shaped by hand.
