Testa in Cassetta Sarda is one of the typical food products of Sardinia and is produced with parts of the pig's head. It is a sausage with a soft consistency and an intense flavour, perfect for accompanying an aperitif or a starter. The process involves boiling the meat in salted water, followed by seasoning with salt, pepper and spices to give the product its characteristic taste. The mixture is then bagged and left to cool before being enjoyed.

    The Ministry of Agricultural, Food and Forestry Policies has inserted the headcheese in the list of Traditional Agri-Food Products from the region of Sardinia (PAT).

    Origins

    In the past having a pig was a guarantee of safe and abundant food and every part of the animal was used, even the head.

    Thus was born the head in box, a sausage which exploits the less noble parts of the pig, but no less nutritious and tasty (head, offal).
