SEA URCHIN PULP - Sardinia - 70 grams
Ingredients for 4 people:
- 4 slices of toasted bread, or ready croutons
- 160 g. hedgehog pulp
- extra virgin olive oil
- a clove of garlic
Preparation
Lightly rub each crouton with the garlic clove. Arrange the raw sea urchin pulp on top and drizzle with a few drops of extra virgin olive oil. If desired, garnish with a few parsley leaves. N.B. To preserve the delicate flavor of the sea urchin pulp, you can avoid using garlic.
