Sardinian Pasta: Lorighittas
Morgongiori's Lorighittas are a delicious, unique, and special type of artisanal pasta. The name derives from " loriga ," which in Sardinian means ring/earring. It's the result of a manufacturing process that takes up to 4-5 hours to produce a kilo.
In the past, this pasta was prepared by all the women of the village for All Saints' Day. Tradition dictates that they be served with a delicious chicken or pork sauce . Now, however, any occasion is a good one to enjoy them with any sauce.
The ingredients are simple: semolina, water, and salt, but the production technique for this artisanal pasta requires skill and a lot of passion.
