Fiore Sardo DOP from Orgosolo aged for approximately 12 months

Raw material: Raw sheep's milk from Sardinian sheep reared in the wild

I wait: Cylindrical in shape with faces with a diameter of 20 cm and a height of 11/12 cm at the rounded heel. The rind is dark due to the light smoking, with an intense olive color. The paste is compact and crumbly, with a decidedly pale straw colour

Taste: Strong, spicy, with ovine and vegetal sensations of dried fruit and medicinal plants and with notes of smoking

Seasoning

 -Matured to an average maturity of 12 months

 

 Pecorino cheese made from raw whole milk, without ferments and with natural capping; lightly smoked with Mediterranean scrub woods

 

Taste with a strong character like the inhabitants of the characteristic town of Orgosolo, known for the authenticity of the products and the uncontaminated environment. The fresh vegetation all year round and blown in from the nearby sea is the secret of the unique taste of this traditional cheese.

 

When available it is a pecorino cheese not to be missed.

    Form: Two flattened cone trunks with horizontal bases

    Crust: Smooth

    Color: Strong yellow that tends to dark brown over time

    PASTA

    Color: White or slightly straw yellow

    Eyes: Light with smooth distribution

    Structure: Compact in the young forms, grainy in the mature ones

    Odor and aroma: Aromatic, toasted if smoked

    Inconfondibile la lavorazione tradizionale a latte crudo, l'affumicatura naturale dà un gusto inconfondibile che si trova solo in Sardegna
