Fiore Sardo DOP from Orgosolo aged for approximately 8 months
Raw material: Raw sheep's milk from Sardinian breed sheep raised in the wild
Appearance: Cylindrical in shape, with sides measuring 20 cm in diameter and a rounded edge measuring 11-12 cm. The crust is dark due to light smoking and has a deep olive color. The cheese is compact and crumbly, with a straw-yellow color and distinct holes.
Taste: Strong, spicy, with hints of sheep and vegetables of dried fruit and medicinal plants and with notes of smoke
Seasoning
-Matured for an average of 8 months
Pecorino cheese made from whole raw milk, without ferments and with a natural coating; lightly smoked with Mediterranean scrub wood.
A flavor as strong as the people of the quaint village of Orgosolo, known for its authentic products and pristine environment. The fresh year-round vegetation, blown in from the nearby sea, is the secret to the unique flavor of this traditional cheese.
When available, this is a pecorino cheese not to be missed.

Shape: Two flattened truncated cones with horizontal bases
Crust: Smooth
Color: Deep yellow that tends to dark brown as time goes by
PASTA
Color: White or slightly straw-colored
Eyelet: Light with regular distribution
Structure: Compact in young forms, grainy in mature ones
Olfactory, Gustatory and Tactile Perceptions
Smell and aroma: Aromatic, toasted when smoked

Einen Punkt Abzug, da die Sachen (auch aufgrund der Außentemperatur sehr warm hier ankamen, was gerade bei Culurgiones nicht optimal ist. Das nächste Mal bitte besser isolieren und ggf. Trockeneis (?) benutzen, oder mehr Kühlpads.

Molto buono, ottimo come gusto e sapore. Se dovessi ricomprare lo comprerei meno stagionato, però questo dipende dal gusto, non posso certo dire che non sia buono, anzi
Tagliato due giorni fa' grattugiato sulla pasta una bomba veramente buono complimenti sicuramente quando lo finirò ne prenderò un'altro
