Wild Cardoon Preserves in Oil
Cardoons for liver health
Numerous studies have focused on the bioactive molecules that characterize this food.
Like artichokes, cardoons are liver-protective thanks to their purifying and anti-cirrhotic properties . Among the substances thought to be responsible for this effect is silymarin .
It is a mixture of three active ingredients (silybin, silychristin and silydianin), which are abundant in milk thistle .
Silymarin is used in cases of poisoning caused by alcohol , hepatitis, drugs or even poisonous mushrooms, in particular Amanita Phalloides.
But silymarin is also known and used in the sports world. Thanks to its properties, it can reduce the toxic effects on the liver caused by oral anabolic steroids .
Some studies report that silymarin's properties also include stimulating breast milk production . However, the European Food Safety Authority (EFSA) has not deemed it appropriate to authorize any public use of this product due to the lack of sufficient scientific evidence to justify it.
