Rustic Aged Pecorino Cheese is a semi-cooked pecorino cheese with slight holes. The paste is white tending towards straw yellow, with a delicate but pleasantly tasty flavour. Thanks to the slow maturing, the shape of the cheese manages to maintain all the aroma and nuances of the Mediterranean scrub. The sheep herds graze guarded but free, giving the cheese an authentic taste and quality. Try it on a cheese board.

    Quality is a tiring conquest.

    Our story begins in the 1980s, when we joined forces among farmers to transform our sheep's and goat's milk into cheese; this is the precious result of the work of AGRICOLA ALLEVATORI TALLAROGA, which was born with the aim of producing typical cheeses of great goodness, healthy and safe in Sardinia.

    And to do that, we do everything right.

     

    We leave our sheep and goats free to graze almost all year round, and only on winter nights do we protect them from the cold in the stables. The companies in our cooperative are small and respectful of the environment: our milk is so good because it comes from uncontaminated land. We treat the cheese with our hands and let it mature naturally; and we want it to stay that way.

     

    Particular attention to market demands has prompted the company to offer traditional products, but also particularly innovative ones, whose flavor reflects the nature of the island and its pastures rich in aromatic herbs.
