   "L'amaretto", in dialect "amarettos de mendula" that is to say "almond macaroon", is a typical Sardinian sweet spread throughout the island.

Characteristics:

  Dell'amaretto there are similar versions also in other Italian regions, which however differ from theamaretto Sardinian in appearance and in the use of some ingredients.

At the base of the cake are the almonds, one of the most used ingredients in the Sardinian confectionary tradition.

This very ingredient makes gli Amaretti biscuits Sardinians different from the other variants as Sardinian almonds have particular characteristics, such as the low percentage of water, which makes the final product unique.

L'amaretto is characterized by:

  • its hemispherical shape;
  • it has a cracked and slightly crunchy crust that contrasts perfectly with the softness of the heart of the biscuit made of almond paste.

  • INGREDIENTS

      

    • 1 kg almonds
    • 900 g sugar
    • 80 g bitter almonds
    • 2 lemons (the zest)
    • 10-12 beaten egg whites

    INSTRUCTIONS

     

    • Prepare the Sardinian macaroons.

    • Whisk the egg whites and keep them aside.

    • Chop the almonds in a food processor and mix them with the sugar.

    • Grate the peel of 2 lemons and add it to the almond and sugar mixture.

    • Incorporate the egg whites very gently, from bottom to top, so as not to disassemble them.

    • Place a sheet of parchment paper on a baking tray.

    • Try also the tozzetti with almonds crunchy and the soft biscuits in almond paste.

    • Take small quantities of dough (about 20 g), depending on the size you want to give the amaretti. You have to give the macaroons shape with wet hands, to feel the right consistency.

    • Roll a part of the biscuit in the sugar, place it on the oven paper and decorate it with an almond.

    • Proceed in this way until all the dough is used up.

    • Cook the Sardinian amaretti biscuits in a fan oven at 150° for about 20 minutes.

    • If you want to decorate them differently, you can also use candied cherries or hazelnutsas well as almonds. You will get colorful and tasty macaroons.
